Grilled Stuffed Chicken Breasts

INGREDIENTS

Serves 4

  • 4 boneless chicken breasts

  • 4 slices of prosciutto

  • 4 slices of provolone cheese

  • 10 fresh sage leaves,chopped

  • 3 cloves of garlic, smashed

  • 2 Tbls of butter

  • 1 Tbls of extra virgin olive oil

  • 1/4 tsp of salt

  • 1/4 tsp of fresh ground black pepper

  • ¼ cup of fresh parsley, chopped

PREPARATION

  1. Slice pockets on the side of the chicken.

  2. Blend together the garlic, oil an butter.

  3. Spoon a little of the garlic butter into the pocket.

  4. Stuff the chicken with the prosciutto, provolone and sage leaves.

  5. Secure the pocket with toothpicks.

  6. Brush the remaining butter on top of the chicken breasts.

  7. Cook directly on the coals for 3 minutes on each sides

  8. Plate and garnish with parsley.
