Hash with Fried Eggs, Sausage, and Arugula


Serves 2.

  • 1 link spicy Italian sausage (about 4 ounces), casing removed

  • 2 cups stuffing

  • 2 large eggs

  • 1/2 cup arugula leaves


  1. Crumble sausage into medium nonstick skillet; cook over medium-high heat until no longer pink, about 6 minutes.

  2. Pour off fat from skillet.

  3. Add stuffing and cook until well browned, flattening with back of spatula and turning and flipping occasionally, about 12 minutes.

  4. Divide stuffing between 2 plates (do not clean skillet).

  5. Fry eggs over easy in same skillet.

  6. Top stuffing with eggs, then arugula.

  7. Season with salt and pepper; serve.
