Italian Two Bean Salad

Ingredients

  •      10 oz Borlotti beans canned

  •      10 oz Cannellini beans canned

  •      2 stick celery sliced

  •      1 small red onion sliced thin

  •      2 tablespoon Parmesan cheese to grate

 

Dressing

  •      6 tablespoons olive oil

  •      2 tablespoon wine vinegar

  •      4 cloves garlic minced/grated

  •      0.5 teaspoon oregano

  •      12 leaves basil torn into quarters

  •      salt to taste

  •      black pepper freshly ground, to taste

Instructions

  1.     Combine beans, celery and onion in a bowl.

  2.     Whisk together the ingredients for the dressing, then pour over the bean salad mix well.

  3.     Grate Parmesan cheese over the top and serve.
