Lemony Pearl Couscous with Asparagus

Ingredients

  • 5 oz Pearl Couscous
  • 3.5 oz asparagus tips
  • 3.5 oz peas
  • 3 tbsp walnut oil
  • Juice and zest of 1 lemon
  • Handful fresh parsley
  • Handful fresh mint
  • Handful baby spinach
  • 2 tbsp pine nuts

Instructions

  1.     Bring a large saucepan of salted water to the boil. Add the Pearl couscous. After 5 minutes, add the asparagus and peas and boil for a further 4 minutes.
  2. While the Couscous is cooking, in a mini-blender  blitz the walnut oil, lemon juice, parsley and mint.
  3.     Drain the couscous, and immediately stir through the dressing, and the baby spinach.
  4.     Divide between two plates, and scatter with the pine nuts and lemon zest.
