Pears Poached in Chianti


Serves 4 people

  • 4 pears

  • 1 cup of water

  • 1 cup of sugar

  • 1 cup of chianti wine

  • 1 lemon peel, sliced

  • 1/2 cup of lemon juice

  • 1/2 stick of cinnamon

  • 3 whole cloves


  1. Combined the sugar and the water in a large saucepan.

  2. Heat and stir until sugar has dissolved.

  3. Stir in the wine.

  4. Stir in the wine, lemon juice, lemon peel, cinnamon and cloves.

  5. Peel, cut the pears in half and core.

  6. Place the pears in the syrup mixture coating them well.

  7. Bring to a boil, cover and cook 5 to 10 minutes until pears are tender.

  8. Talk the pears out and chill.

  9. Chill the remaining syrup.

  10. Plate the pears and pour the syrup over the top.
