Prosciutto Omelette (Frittata al Prosciutto)


Serves 2-3

  • 6 eggs

  • 4 oz (120 grams) cooked prosciutto, chopped

  • 1 fresh flat-leaf parsley sprig, chopped

  • 1 tablespoon Parmigiano cheese, freshly grated

  • 2 tablespoons double cream

  • 1 oz (25 grams) butter

  • Salt and pepper


  1. Lightly beat the eggs and stir in the prosciutto, parsley, Parmigiano cheese and cream.

  2. Season lightly with salt and pepper.

  3. Melt the butter in a frying pan.

  4. Pour in the mixture and cook until golden brown on both sides.

  5. Serve hot.
