Rigatoni Toranese 

Ingredients:

  • 2 medium onions

  • 5 and 1/2 ounces fresh lard

  • 4 tbsp freshly grated Pecorino cheese

  • 17 and 1/2 ounces rigatoni pasta

  • Salt and pepper

Directions:

  1. Bring the water to a boil in a large sauce pan.

  2. Dice the lard and put it in a frying pan with the finely sliced onions and let it simmer.

  3. When the water comes to a boil, cook the rigatoni. Strain the pasta.

  4. Mix in the onion sauce and 4 tbsp of freshly grated Pecorino cheese.
