Roasted Balsamic Peppers
Ingredients

5 large red peppers

3 garlic cloves, crushed

3 tablespoons extra virgin olive oil (plus extra)

Good quality balsamic vinegar

Fresh herbs of your choice for garnish

Sea salt and black pepper
Directions

Preheat oven to 450 F

Place peppers on a large baking sheet and drizzle with olive oil and balsamic vinegar.

Toss in garlic.

Season with salt and black pepper.

Roast for 30 minutes or until caramelized.

Arrange on a serving platter.

Season with sea salt and black pepper.

Drizzle with extra virgin olive oil and balsamic vinegar over the top.

Garnish with fresh herbs.

Serve warm.
