Roasted Mushrooms


  •     1/2c sliced white button mushrooms

  •     1/2c sliced baby Bella mushrooms

  •     1 shallot, finely chopped

  •     1-2 TBSp olive oil

  •     1 TBSp red wine vinegar

  •     1 TBSp minced fresh flat-leaf parsley for garnish


  1. Preheat oven to 375degrees.

  2. Combine the mushrooms & shallots onto a lined baking sheet (I used aluminum foil).

  3. Sprinkle with the olive oil & vinegar.

  4. Bake for about 30 minutes.

  5. Sprinkle with the parsley & serve.
