Sausage and Spinach Panini


Serves 4 people.

  • 8 slices of Italian Bread, 1/2 inch thick

  • 4 pieces of sweet or hot Italian sausage

  • 1/2 pound of fresh baby spinach, rinsed

  • 1 clove of garlic, crushed

  • 1/2 cup of extra virgin olive oil

  • Salt and fresh ground pepper to taste


  1. In a medium size skillet sauté the sausage in 2 Tbls of olive oil for around 10 minutes turning during the cooking.

  2. Remove the sausage and slice lengthwise.

  3. Add the spinach to the skillet.

  4. Cover and sauté the spinach until wilted.

  5. Brush the slices of bread with the remaining olive oil and rub with garlic the clove.

  6. Place some of the spinach on one slice and top with the sausage and the remaining slice of bread.

  7. Place the Panini on the griddle and press for around 2 to 3 minutes on each side until the bread is toasted
