Skillet Squash

Ingredients

Yield: 6 servings

  •     8 yellow squash

  •     1 small onion, thinly sliced

  •     4 slices Pancetta, fried crisp and chopped

  •      grease from fried Pancetta

Directions

  1. Wash and slice the squash.

  2.  In a large skillet add Pancetta grease and onion and cook over medium-high heat until the onion is tender.

  3. Add the squash, Pancetta and salt and pepper to taste.

  4. Cook until desired tenderness.
