Sweet and Sour Baby Onions


Serves 4-6.

  • 1 and 1/2 lbs cipolline or pearl onions, peeled

  • 1/2 cup raisins

  • 3 tbsp extra-virgin olive oil

  • 1/4 cup balsamic vinegar

  • 1 and 1/2 tbsp sugar

  • Kosher salt, to taste


  1. Place raisins into a small bowl.

  2. Cover with hot water and let soften for 30 minutes.

  3. Heat olive oil in a 12-inch skillet over medium-high heat.

  4. Add onions and cook until golden brown, 8-10 minutes.

  5. Pour off olive oil.

  6. Drain raisins.

  7. Add raisins, vinegar, and sugar and season with salt.

  8. Cook, stirring, until sauce thickens, 2-3 minutes.
