Zucchini and Chickpea Meatball recipe


(for about 7 meatballs):

  • 1/2 zucchini

  • 1 handful of boiled chickpeas

  • 1/2 onion (small)

  • 6 green olives

  • kamut milk to taste

  • extra virgin olive oil

  • salt and pepper

  • bread crumbs


  1. Mix with the blender zucchini (chopped) with onion (also chopped) and olives (1 pinch of salt and pepper), using a little ‘milk kamut until you get a smooth consistency.

  2. Then add the chickpeas and 1 drop of extra virgin olive oil, whisking and if necessary adding a little ‘milk.

  3. Finally abound with bread crumbs, do not be put off by the texture too soft, and create balls helping with the breadcrumbs. 1 brown them in a pan with little oil until they are golden brown.
