Zucchini and Onion in Red Sauce Recipe
Ingredients

1 zucchini

1 small onion

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon pepper

6 ounces crushed tomatoes (San Marzano)
Directions

Slice zucchini and onion into thin slices

Add olive oil to pan and let simmer at medium-high heat for 2-3 minutes

Add onion and let saute for 5 minutes

Add zucchini, salt, and pepper and cook for another 5 minutes

Add crushed tomatoes, stir into zucchini and onions and then cover pan with lid

Cook for another 10 minutes and stir occasionally. Once zucchini are soft, dish is ready.

Remove from stove, let sit for 5 minutes and then serve
