Zucchini and Onion in Red Sauce Recipe

  •     1 zucchini

  •     1 small onion

  •     1 tablespoon olive oil

  •     1 teaspoon salt

  •     1 teaspoon pepper

  •     6 ounces crushed tomatoes (San Marzano)


  1.     Slice zucchini and onion into thin slices

  2.     Add olive oil to pan and let simmer at medium-high heat for 2-3 minutes

  3.     Add onion and let saute for 5 minutes

  4.     Add zucchini, salt, and pepper and cook for another 5 minutes

  5.     Add crushed tomatoes, stir into zucchini and onions and then cover pan with lid

  6.     Cook for another 10 minutes and stir occasionally. Once zucchini are soft, dish is ready.

  7.     Remove from stove, let sit for 5 minutes and then serve
