Anchovies fritters

Ingredients for 6 people:

  • Small anchovies 500 gr

  • 4 eggs

  • 2 tablespoons of flour

  • grated pecorino cheese 30 gr

  • baking soda

  • 2 tablespoons of chopped parsley

  • olive oil (for frying)

  • salt and pepper.

PREPARATION

  1. In a bowl beat the eggs with the flour, being careful not to create lumps, then add the grated cheese, a pinch of baking soda (to make a soft dough), chopped parsley and previously washed anchovies.

  2. Season with salt and pepper then pour the mixture in spoonfuls into a pan with the hot oil.

  3. Fry until will be golden then drain them and put them to dry on a paper towel.

  4. Serve hot or cold.
