Anchovies fritters
Ingredients for 6 people:

Small anchovies 500 gr

4 eggs
-
2 tablespoons of flour

grated pecorino cheese 30 gr
-
baking soda
-
2 tablespoons of chopped parsley
-
olive oil (for frying)

salt and pepper.
PREPARATION

In a bowl beat the eggs with the flour, being careful not to create lumps, then add the grated cheese, a pinch of baking soda (to make a soft dough), chopped parsley and previously washed anchovies.

Season with salt and pepper then pour the mixture in spoonfuls into a pan with the hot oil.

Fry until will be golden then drain them and put them to dry on a paper towel.

Serve hot or cold.
