Chicken, eggs and lemon

Ingredients for 4 people:

Chicken 1kg

3-4 eggs

1 onion

2 lemons

dry white wine

olive oil

chopped parsley

salt, black pepper.


Cut the chicken into small pieces and put it to fry in a pan with olive oil, in which you have made brown the finely chopped onion. Season with salt and pepper, drizzle with 1 glass of dry white wine if necessary adding a ladle of hot water.

In a bowl beat the eggs, add the chopped parsley, salt and pepper.

Pour the mixture over the chicken and let it thicken for a few minutes.

Before you remove from heat, sprinkle with lemon juice and serve warm.
