Elderflower fritters


for 4 people:

  1. Elder flowers freshly picked

For the batter

  • Flour 150g

  • ½ liter of milk

  • 1 egg

  • butter 30g

  • ¼ teaspoon baking powder

  • salt.

For frying

  • olive oil

  • vanilla sugar (for sprinkling).


  1. In a bowl put all the ingredients together (except elderflower) and mix them well until the batter is quite liquid.

  2. Put to heat the olive oil in a pan, then dip the elder flowers into the batter and then fry them in hot oil.

  3. Stir on both sides for a few minutes, drain and put them to dry on a paper towel, then sprinkle with icing sugar and serve immediately.
