Parmesan~Potato Gratin



  •     2 large potatoes, cleaned & peeled

  •     1 c ricotta cheese

  •     1 c shedded parmesan cheese

  •     1 tsp herbs (can use anything  oregano, basil, etc.)


  1. Grease a small, oven-proof casserole dish. Mix the cheeses & herbs in a small bowl. Using a mandoline OR slicing extremely thinly, create thin potato slices.

  2. Begin layering- potato slices, spread cheese, potato slices, spread cheese, etc., ending in the cheese. Sprinkle more parmesan on top.

  3. Bake at 400 degrees for 30 minutes or until the top is browned.
