Skillet Squash with Guanciale
Ingredients
Yield: 6 servings

8 yellow squash

1 small onion, thinly sliced

4 slices Guanciale, fried crisp and chopped

Guanciale grease from fried bacon
Directions

Wash and slice the squash.

In a large skillet add Guanciale grease and onion and cook over medium-high heat until the onion is tender.

Add the squash, Guanciale and salt and pepper to taste.

Cook until desired tenderness.
