Skillet Squash with Guanciale


Yield: 6 servings

  •     8 yellow squash

  •     1 small onion, thinly sliced

  •     4 slices Guanciale, fried crisp and chopped

  •    Guanciale grease from fried bacon


  1. Wash and slice the squash.

  2.  In a large skillet add Guanciale grease and onion and cook over medium-high heat until the onion is tender.

  3. Add the squash, Guanciale and salt and pepper to taste.

  4. Cook until desired tenderness.
