Stuffed Pepper Bowls by Stacee in Tuscany
Ingredients

Bell peppers

1/2 C breadcrumbs

1/2 C fresh parsley

2 cloves garlic

Extra Virgin olive oil (as much as you need to make a paste)

Salt and pepper to taste.
Directions

Cut peppers into small bowls to hold filling.

Set on foil-lined baking sheet.

Preheat oven to 350F.

Chop parsley and garlic.

Combine breadcrumbs, parsley, garlic, salt, pepper, and olive oil. You can add a dash of lemon juice if you like.

Make paste as wet/dry as you like by adding more or less oil.

Fill pepper bowls and drizzle a little extra olive oil on top.

Bake for 20-30 minutes.

Garnish with fresh parsley.
Serve as an appetizer or a side dish
