Stuffed Pepper Bowls by Stacee in Tuscany


  • Bell peppers

  • 1/2 C breadcrumbs

  • 1/2 C fresh parsley

  • 2 cloves garlic

  • Extra Virgin olive oil (as much as you need to make a paste)

  • Salt and pepper to taste.


  1. Cut peppers into small bowls to hold filling.

  2. Set on foil-lined baking sheet.

  3. Preheat oven to 350F.

  4. Chop parsley and garlic.

  5. Combine breadcrumbs, parsley, garlic, salt, pepper, and olive oil.  You can add a dash of lemon juice if you like.

  6. Make paste as wet/dry as you like by adding more or less oil.

  7. Fill pepper bowls and drizzle a little extra olive oil on top.

  8. Bake for 20-30 minutes.

  9. Garnish with fresh parsley.

Serve as an appetizer or a side dish
