Scungili Salad – Italian Cook – Chef Pasquale

Growing up in our area it was difficult to find fresh Scungili so my mother would take canned Scungili and make a wonderful and delicious salad. This recipe combines the Olive Oil, Celery, Black Pepper, Salt, Garlic, Lemon, Fennel, Sweet Pepper, Sweet Basil, pieces of Orange and Fresh Onion.

It can be used for Lunch as the main entre’. Or as an appetizer or antipasto… Some people like it … Some don’t but it is very good and light. We enjoy it in our home. Wonderful Scungili Salad. Hope you Enjoy.
